The Veggetti is Amazing!

As I mentioned in my low carb coconut pancakes post, I am doing a low carb high fat way of eating. Although I am yoyo’ing since I’ve started, I have manage to make it to 6lbs lost in 2.5 weeks. Not a fast loss, but still a loss nonetheless. I think it may have something to do with me not really keeping track of how much of what I’m eating, which I need to start doing since I need like 5% carbs, 70% fat and the rest protein. I think I am eating more protein than fat lately which is causing me to gain. The thing is, you need to eat more fat than protein in this way of eating, otherwise it will just turn to glucose and be stored as fat. The hardest part about this way of eating is not being able to have sugar, not just sugary sweet desserts, but fruits that are high in sugar as well. I love my fruits, so I sneak a bite here and there which is not going to hurt me.

Trying to put together meals though that doesn’t involve some type of salad has been challenging. I needed to come up with a way to eat something similar to that I loved, only in a healthier way which led me to the Veggetti. My sister had been mentioning this thing but never tried it out herself, so since I couldn’t find it in a store, I decided to order it on Amazon since I have prime 2 day shipping.

Let me tell you, this thing is absolutely amazing! I was able to make zucchini noodles in 1 minute flat. Just stick your vegetable of choice in the thin or thicker grater side and gently twist the vegetable. It starts perfectly shredding your veggies into delicious noodles. I decided I was going to make some shrimp Alfredo with zucchini noodles since Alfredo sauce is high in fat. It was sooo good and so simple. My husband isn’t exactly following this with me since he doesn’t need to lose any weight, so having to cook 2 different meals is a pain in the rear. Having something quick and easy is a godsend and the veggetti is now my new best friend.

 

Down 32lbs and Counting!

As the blog title states, I am down 32lbs, but probably not so much after this night of drinking red bull and vodka. Damn the empty calories in booze. Luckily though I drank calorie free red bull, so I’m good there at least!

If it wasn’t for my damn birthday, I think I would be down to probably 195lbs instead of 198 from 230. But I will take what I can get. Nutrisystem will be over in a month, but I will be starting up on bioscience for 90 days so I hope to lose the extra weight through that. I want to be at a healthy, ideal weight for my body type and hopefully in time for my trip to Vegas in October. I cannot wait!!! I’m stoked I get to spend it with people I am close with who know how to have fun. I just hope there are no freak out dramatic episodes since one of my friends is really self conscious about their relationship. In a way I can relate to her since my boyfriend and her boyfriend are pretty much twins in a sense that they share the same brain pattern. I have learned after 6 and a half years that this is how he is. I have, however, toned him down a bit by telling him that the things that he does irritates me to no end, so he’s calmed down a bit.

Anyways, yay for weight loss. I cannot wait to be down even more!

Update: I woke up and I was 196.4. YESS!!

I Have Lost 23.4lbs So Far!

On a more positive note…

I have lost 23.4lbs and I am hoping I go down another 17lbs in the next 2 months. If I keep exercising on the elliptical that we bought, or continuously go on hikes on weekends it’s nice, I think I can easily reach that goal.

I took some before and in-between progress photos that I won’t share here, since they are vomit inducing, but I can definitely tell a difference even though my pants size hasn’t necessarily gotten any smaller. I do notice they are a bit baggier, but I can’t tell if it’s because of the stretch in them or what.

I can wear my favorite pair of jeans that got too small for me though, so I guess I am beginning to see a pants size change. I have been holding off on buying new clothes until I get to where I want to be, so I hope it comes sooner rather than later, since I don’t know how long I can hold out on my shopping addiction!

I’m Almost Down 10lbs!

So far while being on Nutrisystem, I have lost 9.6lbs. Not exactly the huge accomplishment that I would have expected while being on it for 3 weeks, but it is better than nothing for sure. Typically you only lose around 1lb a week on it anyways, so I guess I am “technically” ahead.

These 3 weeks have not been that hard really, since I think my stomach has shrunk and gotten used to the smaller correctly portioned meals. I am no longer feeling hungry through out the day like I was on week 1.

AND OMG, the peppermint cookie patties are simply to die for. I never thought any of the desserts on a diet regimen would actually taste normal. Now some have that weird aftertaste, like the caramel desserts, but this one is amazing. I had to place an order for 7 of those in my next batch of food for the month. If I could just order those for dessert each and every time, I would be in heaven, and losing weight while eating it would be mind boggling as it tastes too damn good to be true.

So that is where I am at as far as my weight loss goals. I need to step it up and start walking, but I find very little time to do everything during the day that has to be done, let alone adding exercise to the mix. I went elliptical shopping yesterday, but I am having a hard time finding something that is smooth, comfortable and under $600 price wise.

So if anyone has any recommendations of those, please don’t hesitate to leave a comment below. I need all the help I can get!
